Menu Monday




This week's menu is brought to us by my oldest daughter, Megan. She came up with it over brunch this morning. She even made the shopping list. She looked up recipes. And checked the cupboards for the ingredients. She did a great job. And even better is that she will help cook, if not cook herself. Love this part.

Menu Monday - (The real story.)

Usually I am pretty good about cooking 4-5 nights of the week.
This last week was so CRAZY that here is what really happened...
SUNDAY
The week started out pretty good.







MONDAY
Danny had a late meeting.
Chinese is the standard fare on those nights.
Still not so bad.






TUESDAY
Day spent carting oldest kid with knee pain to docs.
Meal could have been better.







WEDNESDAY
Had to feed them all by 5:20.
This was the best I could come up with.







THURSDAY
Busy schedule. Route took me right past here.









FRIDAY
Tradition. Just ask Melissa.







SATURDAY
Now we're getting back on track.

Okay, so maybe it wasn't THAT bad.
But still, next week WILL be better.

(You may have noticed that salad is listed each day. I have decided that we are going to turn into rabbits and, therefore, we must get used to eating rabbit food. I'll warn you before the transformation.)

Mon: Really big salads (lettuce, shredded chicken, bacon bits, cucumber, tomato, cheese, feta cheese, strawberries, mandarin oranges)


Tue: Sandwiches (Has to be quick. I am usually in the car from 3:00pm to 6:30pm on Tuesdays)





Wed: Chicken Enchilada's (Megan had a really sore throat last week, so I waited on these since she REALLY likes them.)





Thur: Beef Kabobs, Rice and salad





Fri: Calzone's (messed you up with this one, didn't I?)





Sat: Italian Hamburgers a'la Megan/Rachel Ray, oven fries and salad





Sun: Beef Chili, rice and a BIG glass of milk

Bonus Recipe: Melissa Chicken


I really don't have a recipe, per se, I take chicken breasts and slice into thin filets. Then I dredge in seasoned flour (flour with garlic powder, onion powder, paprika, salt and pepper). I dunk these into a beaten egg, and then cover with bread crumbs and saute in a little bit of olive oil.


My girls love these. I guess because they are really close to chicken nuggets????

Menu Monday

Monday - Hot Dogs, baked beans, asparagus and chips (Melissa's choice)

(edit: We had the hot dogs, but I opted for fresh fruit and baked fries.)

Tuesday - Pasta with sauce and Texas Toast (Morgan's choice)
(edited: Melissa handed me a flyer for McDonald's Night for her school, along with a lot of "Please, I'll be extra good." So, we had the food of Olympians. Again.)


Wednesday - Chicken with Green Beans (Megan's choice)
(edited: Danny had a late meeting, so I was to do pick-ups and drop offs. Melissa had basketball, so I couldn't get her until after 5:30. Megan had a guitar lesson at 5:30. So we went to Cici's for pizza. Not my favorite. I don't think I'll be going back there for a long, long time. But, hey, it was ready when we walked in the door AND I didn't have to cook.)


Thursday - Steamed Shrimp and salad (My choice)
(edited: Sam's chicken, steamed rice and baked asparagus. I'm allowed to change my mind. Says so in the Woman's Guide.)


Friday - Pizza and Survivor
(edited: This happened.)


Saturday - Dinner out
(edited: Danny and I went on a date. We went to a Japanese steak house. We fed the girls chicken nuggets, mac & cheese, and peas. Their choice.)


Sunday - TBD
(edited: Homemade Spag Sauce, noodles and Texas Toast. Yum.)

Menu Monday




Monday - Melissa Chicken, steamed rice and salad
(I'll post a recipe later this week)
(edit: I was lazy last night, so we had Ravioli and Texas Toast. Thank you Rosemary! Shouldn't you run off and get a donut now?)


Tuesday - Chinese Food (Danny's out of town)
(edit: Happy Buffet was great. mmm)


Wednesday - Fish Sticks and Mac & Cheese (Yup, he's still OOT)
(edit: Sort of stuck with this one. We had Mac & Cheese, but I couldn't do the Fish Sticks. I picked up a cooked chicken from Sam's and steamed some fresh green beans. It was great. And I have leftovers for tomorrow. Not the Mac & Cheese though. My little rats finished that off.)


Thursday - Sopa and Quesadillas (He's back tonight after dinner)
(edit: a bit of a hodge-podge. Melissa stayed at school for her play rehearsal and had pizza there. Megan, Morgan and myself just kind of foraged through the fridge. After the play, we celebrated with Melissa's choice, Happy Meals.)


Friday - Pizza
(edited: We actually had Pizza. At least 3 of us did. Melissa had a re-heated McD's Cheeseburger on the way to a sleepover. I had to make sure she ate something good (figure that one out) and Megan ate at a Bingo game she volunteered at for community service hours.)


Saturday - Dinner out
(edited: I actually made Chicken Stew served over rice. It was really yummy.)


Sunday - TBD
(edited: I attempted to make a Chicken Noodle casserole. It was okay, but I know better what to do next time. Maybe use a recipe. Or have the proper ingredients in the house.)

Monday - Chicken Enchiladas, refried beans and salad
(edit: We had the Soup. I was running really short on time)

Tuesday - Chicken Noodle Soup
(edit: We had the Enchiladas. Yum.)

Wednesday - Hamburger Helper for them. Room service for me. I'm in DC for a couple days.
(edit: Trip was cancelled. We had Chik-Fil-A.)

Thursday - Kielbasa, steamed rice and salad
(edit: Panini and Tomato soup.)

Friday - Pizza and Survivor
(edit: I stopped on the way home and got some Italian Stromboli's)

Saturday - Chicken with Green Beans
(edit: I had forgotten that we had to go to a birthday party, which was Laser Tag and then dinner at a Mexican restaurant)

Sunday - Marinated flank steak, mashed potatoes and salad
(edit: We had the flank steak and the salad, but I opted for roasted potato wedges instead of the mashed. You didn't really think I could stick to the WHOLE plan for today did you???)

Again, check back for updates as to the actuality of each meal. It'll make you feel normal.

Menu Monday

Monday - Pork medallions, steamed rice, corn and watermelon
(edit: We actually had this and dinner was yummy.)


Tuesday - Food on the go. Tuesday's have just gotten really busy for us.
(edit: We had the food of the Olympians. McDonald's.
Nothing too good for my family.)

Wednesday - Beef Soup, quesadillas
(edit: Pasta with meatsauce. I had a really bad headache, so hubby cooked.)


Thursday - Leftovers
(edit: Dinner out at Smokey Bones. Headache continued, so we went out.)


Friday - Pizza
(edit: Danny and Melissa went to a dance. Megan, Morgan and I went to Panera.)


Saturday - Reservations - Dinner out once a week is something to look forward to.
(edit: Pizza and Survivor. Yay, we squeezed it in.)


Sunday - Pasta with Meatballs
(edit: Pasta with Meatballs DID indeed happen. 2 out of 7 isn't sooo bad. Is it?)

Menu Monday



Monday - Chicken enchiladas, refried beans and salad
(edit: I forgot the tortillas at the store, so we had Salad with shredded chicken)


Tuesday - Hot Dogs, baked beans, chips
(edit: One of those boxed dinner kits. Chicken with Mashed Potatoes and topped with biscuits. I didn't like it, but they all did. Yuck.)


Wednesday - Marinated Flank steak, roasted potato wedges, fresh steamed green beans (didn't happen last week)
(edit: Leftovers because I hadn't marinated the Flank Steak, yet.)


Thursday - Chili, cornbread (leftovers from Super Bowl Sunday)
(edit: Had the Marinated Flank Steak, roasted potato wedges and canned green beans. Didn't get the fresh ones because they looked really old.)


Friday - Pizza (and Survivor. YAY. It's back on.)
(edit: Pizza Rolls, taquitos and leftover Chili)

Saturday - Mexican food at our Fav restaurant
(edit: This happened. It was good too.)

Sunday - Heart shaped Meatloaf, Heart molded Mashed Potatoes, green beans made with lots of Heart and Heart shaped Brownie Sundaes
(edit: Had the meatloaf, mashed potatoes and creamed corn. Dessert was cupcakes)

Monday - Pasta with homemade sauce made from Emeril's "There's a Chef in My Soup" cookbook.



Tuesday - Sopa and Quesadillas (Mexican Soup and Grilled Cheese)



Wednesday - Melissa Chicken, steamed rice, green beans and salad



Thursday - Leftovers - Yumm



Friday - Pizza



Saturday - Marinated Flank Steak, Roasted potato wedges and salad


I marinate the Flank steak using olive oil and a homemade rub. I drizzle olive oil all over the flank steak, then sprinkle salt, crushed garlic, crushed rosemary and a bit of pepper. I fold the steak in half onto itself and wrap it in plastic wrap tightly. I then refrigerate for up to two days before grilling. The flavor is fantastic. I will use the same spices on the potato wedges.

Sorry I don't have a menu for you. But I am taking the week off. So to speak. He'll probably feed them Hamburger Helper, Happy Meals, Mexican Food and who knows what else. But, I am not worrying about it. I will be out of town. Dining in restaurants and room service. Sometimes, I just love business trips.

But keep checking back. I have posts scheduled for this week.

Menu Monday on Sunday - The world's gone crazy.


I had to post this a day early because Melissa's birthday is tomorrow and I dont' want her to have to share her day with a menu. As a result, you, my lucky reader, get treated to an EXTRA day of our eating habits. Aren't you all warm and fuzzy inside now?!?!?!?!?



This week is going to be rough. It's back to the ol' grind stone for all of us. So the menu has to be really easy.


Sunday - Chili served over Rice, Salad and Milk. (I love milk with my Chili. I think it soothes the heat.)


Monday - Sopa, grilled cheese and apple sauce. It's Melissa's birthday and she get to choose. Hmmm.


Tuesday - Pasta with jarred sauce and Salad. (I have to heat up 2 different sauces because my kookie family won't eat the same one.)


Wednesday - Tequila Lime Chicken, Rice, Asparagus and Salad


Thursday - Burritos/Soft tacos


Friday - Kielbasa, Buttered Noodles, Green Beans and Salad


Saturday - Pizza (might be home-made this time)


Sunday - Chicken Stew (Mom's recipe - Yummmmm)

Menu Monday

I haven't done one of these in a bit, so I better get back on it.

Sunday - Hot dogs, baked beans, oven fries and salad. I also had some Broccoli salad from the grocery store. I don't make it because no one else here will eat it. The grocery store's is pretty good.

Monday - Homemade shredded beef tacos. I made the beef in the crock pot on Sunday. Megan and I have already shredded it. Now I will just put them together and fry them. Tons of calories, but WAY more fun and better tasting.

Tuesday - Chicken something

Wednesday - Ground beef something

Thursday - Sandwiches. Morgan has a track meet and it has to be a quick meal.

Friday - Pizza and Survivor.

Saturday - Grilled something.
