Menu Monday
Monday - Pasta with homemade sauce made from Emeril's "There's a Chef in My Soup" cookbook.
Tuesday - Sopa and Quesadillas (Mexican Soup and Grilled Cheese)
Wednesday - Melissa Chicken, steamed rice, green beans and salad
Thursday - Leftovers - Yumm
Friday - Pizza
Saturday - Marinated Flank Steak, Roasted potato wedges and salad
I marinate the Flank steak using olive oil and a homemade rub. I drizzle olive oil all over the flank steak, then sprinkle salt, crushed garlic, crushed rosemary and a bit of pepper. I fold the steak in half onto itself and wrap it in plastic wrap tightly. I then refrigerate for up to two days before grilling. The flavor is fantastic. I will use the same spices on the potato wedges.
Sunday - Dinner out {maybe}

Well this all sounds quite tasty. Sure wish we lived closer so I could "accidentally" drop by around supper time....lol
by the way, I hope the turtles are fine - one of them is looking a little green (tee hee)
Hey, what's Melissa Chicken? I think I want some. And it looks like you and I are twins with our post vacation weather that we come home to. It's so nice to know there is someone out there who understands....
